Chocolate Angel Food Cake. Add vanilla, cream of tartar and salt. In a clean large bowl, whip egg whites, salt, and cream of tartar with an electric mixer on high speed until very stiff.
Combine cake mix and cocoa in large mixer bowl. In the bowl of a stand mixer and using the wire whisk attachment, mix together the cream of tartar and egg whites. Sprinkle with powdered sugar; top with strawberries.
Whisk together cake flour, cocoa, espresso powder, and salt.
Remove cake to a serving plate.
Run a knife around side and center tube of pan. Gently fold them in with a spatula. Cut through the batter with a knife to remove air pockets.
