Immediately remove from pan and cut in half horizontally. Mix whipped topping into pudding mixture. Place a mixing bowl in the freezer to chill.
Then, gently fold in the whipped topping.
Alternate layers of graham crackers and pudding mixture in a baking dish.
Fold in the whipped topping until evenly mixed. In a medium-sized bowl, whisk together flour, baking powder, and salt. Just before serving, place bottom eclair layer on a serving platter.
