Chocolate Dipped Shortbread Cookies. Slice into strips, then dip in melted bittersweet chocolate and sprinkle with coarse sea salt. Dip the ends of the cookies in the chocolate and place them on a piece of waxed or parchment paper to set.
Chill: Shape the dough into a disc and wrap it tightly in plastic wrap. Sprinkle the top of each cookie with a little granulated sugar. Line two baking sheets with parchment.
Combine the butter, sugar, and salt in a stand mixer bowl (use the paddle attachment) or a large mixing bowl.
In large bowl, beat butter, powdered sugar and vanilla with spoon.
Add the vanilla extract and beat until well combined. If you prefer you can roll the dough into a log shape, wrap in plastic and refrigerate. Add Salt & Vanilla: Mix in the salt and vanilla extract.
