Cranberry Upside Down Cake. In a clean bowl, using a hand mixer, beat egg whites until stiff. Sprinkle mixture evenly over bottom of pan; arrange cranberries in a single layer on top.
Gently spoon batter over cranberries, smoothing the top out evenly. Sift flour, baking powder, salt, cinnamon, and ginger together in a medium bowl, and set aside. In a small mixing bowl add egg whites and cream of tarter.
Spoon batter into prepared pan, and spread it evenly over cranberries.
Add eggs one at a time, beating after each addition.
On medium high heat, stir the sugar as the butter melts. Spoon the batter over the cranberries, spreading evenly. Add the eggs one at a time, beating after each addition.
