Place over hot water until melted. Next, mix peanut butter, butter and vanilla together in a large bowl. In a stand mixer fitted with the paddle attachment, or in a large bowl with an electric mixer on medium speed, combine butter, peanut butter and vanilla and mix until thoroughly combined.
Allow chocolate coating to cool and set.
Gently roll peanut butter balls in melted chocolate until evenly coated; arrange on the prepared baking sheet.
Stir in cereal until well combined. Dip chilled peanut butter balls in chocolate mixture to coat. In a large bowl, combine confectioners' sugar and cereal.
