Chocolate Ganache With Milk. Just as mixture starts to boil, pour it over chocolate and whisk until combined and chocolate has melted. Cover the ganache with cling film (make sure the cling film touches the ganache to prevent air bubbles).
Heat the milk in the microwave or on the stove top, do not let it boil. Place chocolate chips in a small bowl. Milk chocolate ganache that's been left out in warm weather too long - it's too soft and semi-runny.
Stir slowly until the cream and chocolate are fully combined, and the ganache is silky smooth.
Since milk and white chocolate have more milk solids than dark chocolate does, they require less cream to get to the same consistency as dark chocolate ganache.
Chop chocolate roughly and transfer it to a bowl. Pure Chocolate: You can use semi-sweet chocolate (recommended), bittersweet chocolate, milk chocolate, or white chocolate. Pour into a plastic squirt bottle to easily add drips to a cake.
