Chocolate Chia Seed Pudding
Chocolate Chia Seed Pudding. You can even add a little fresh mint to this recipe to get a minty chocolate flavor if you want to mix things up a bit. Instead of being a one-note texture, the chia seeds provide this very slight crunch and chewy element to each bite, which your taste buds will thank you for.
In a medium sized mixing bowl, combine the milk, chia seeds, cocoa powder, maple syrup, vanilla and salt, whisk until blended. Cover and place in the fridge to chill. Then add remaining dairy-free milk and whisk until smooth.
Strawberry Coconut: Use canned or carton coconutmilk for the milk of choice in the base recipe, and garnish with chopped or sliced strawberries or layer the pudding in.
Cover and refrigerate for at least an hour.
Top with fruit and granola when eating. Whisk together until all ingredients are combined. It's not enough to just stir the chocolate chia pudding once and then set in the fridge.
